چکیده:

This paper presents a method based on computer vision systems (CVS) to estimate grape drying process by measuring shrinkage and color during drying process.Experimental data obtained from images captured at different drying temperatures(50-60 -70 ◦C). Results showed temperature had effect on moisture content, shrinkage and color changes. The liner regression was applied for correlating the shrinkage and color features to moisture content of dried grapes. Consequencesobtained displayed thatthere weregood relationship between moisture content to shrinkage and color. The result also showed the moisture content of grapes can measured online with machine visionduring drying process.
