چکیده:

β-glucans are biopolymers drived from the cell wall of a varity of plants and microorganisms such as berley, yeast and mushroom. Β-glucans are glucose polymers with glycoside linkages . the simplest from of β-glucan has seen in liner and un branched from with β- (۱,۳)-glucan . in the form of branched β-glucan thelinkages are (1,3) , (1,4) , (1, 6) wich is (1,3) β-glycosides linkage with branch in (1, 6) that has shown in researches as most active glucan. Use of β-glucan and extracellular polysaccharides of fungal orgin is proposedas the active principle of medicines and so far in the modern foodindustries.β-glucan is use to treat cancer for its effect on modifying the immune response of the organism. This compound causes increasing of the viscosity of intestinal contents and sighnificant decreasesin glucose and undesirable cholesterol uptake. In this case β-glucanis extracted from a new fungel source. Extraction is done using isopropyle alcohol and calcium chloride. Extraction product is analized with FT-IR spectroscopy
